The Portland Bitters Project takes pride in their small-batch, handcrafted approach. They start with hand-picked, organic, wild-crafted, therapeutic-grade botanicals (roots, leaves, fruit, and sometimes seeds) that are slowly steeped in organic, non-GMO, over-proof cane spirits for weeks. This meticulous process allows the delicate flavors to infuse the liquid without being damaged by heat.

Once the botanicals are strained out, the resulting tinctures are combined in precise proportions to create the bitters. This careful blending ensures that the unique flavors of each herb come through clearly, giving the Portland Bitters Project complete control over the final product.
