In 2008, while tending bar at the Slanted Door in San Francisco, I established Small Hand Foods with the aim of crafting classic cocktails using whole, natural ingredients and free of additives, as they were originally intended to be made. Gum Syrup, a product I developed, is a simple syrup infused with gum arabic, which adds a rich, velvety mouthfeel. The use of organic sugar imparts an amber color and a subtle molasses flavor to the syrup.
